Can we all believe that April is almost gone? Where in the world is the time going? I am literally less than two weeks away from graduation. The next week or so will be interesting with me figuring out what my final showpiece will be. I had the opportunity to work with sugar and although I am not always the gentlest person, I had so much fun. Blowing sugar and pulling sugar is truly a work of art. I did get a few blisters on my hand but it was worth it.
I also was able to work on French Macaron’s this month. I had tried them a month or so ago and had cracked lumpy tops the first time. I tried them again and they had feet (ruffles on the edge) but hollow shells. I tried then a third time and not only smooth shells with feet they were also crunchy on the outside and chewy on the inside. I was so happy. I created five different flavor profiles: four of them had the standard flavor shell with mint ganache, coffee buttercream, raspberry buttercream, and raspberry ganache while the fifth one was a chocolate shell with a ring of chocolate ganache and marshmallow fluff in the middle. My sister who is getting married in January is hoping to have Macaron’s as her favors so I have been using her as my tester. All but the raspberry one received her approval and I can not wait to keep experimenting!! Hope everyone’s April has been going fantastic!
